Creamy coconut milk ice cream

About 4 or 5 months ago we invested in an ice-cream maker...with several ice-cream lovers in this family (most of them under the age of 5!) we decided it would be a good investment, since that way we will know just what is going into that ice-cream (have you read the ingredients of store ice-cream???). Since then the boys and I have had lots of fun concocting new flavours and recipes. Some work, some don't; but this morning we made coconut milk ice-cream sweetened with organic agave. Result: creamy and delicious!

It is SUPER easy to make, here's the recipe:
In a large bowl mix the following (stir it a bit as you add each ingredient):
- 2 cups coconut milk
- 100% Agave syrup (the amount you use depends on how much of a sweet tooth you have, we used just less than 2/3 of a cup)
- 2 cups of heavy whipping cream
- 1-2 teaspoons of vanilla (again to suit your taste)
Mix it with a whisk for a few seconds, then pour into your prepared ice-cream maker (as per the maker's instructions).
